Sweet Potato & Beef Herb Mini Meatloaves
Why it works:
This recipe is warming, blood-building, and rich in anti-inflammatory herbs. Grass-fed beef supports iron levels, while sweet potato offers complex carbs and vitamin A. Anti-inflammatory herbs (rosemary, oregano, thyme) soothe the body, and mini-loaves cook faster — great for meal prep!
Serves: 4 (makes ~8 mini loaves)
Time: 45 minutes
Ingredients:
1 lb grass-fed ground beef
1 cup mashed roasted sweet potato (about 1 medium)
½ yellow onion, finely chopped
2 cloves garlic, minced
1 tbsp fresh thyme (or 1 tsp dried)
1 tbsp chopped fresh oregano
1 tsp chopped rosemary
1 egg (or flax egg)
2 tbsp ground flaxseed or oats, or gluten free breadcrumbs! (for binder)
1 tbsp tomato paste
1 tsp sea salt
Cracked black pepper
Optional: drizzle of olive oil top
Instructions:
Preheat oven to 375°F. Line a baking tray with parchment.
Mix all ingredients in a large bowl until well combined.
Shape into small individual loaves (like muffins without a tin) and place on tray.
Optional: top with a thin layer of tomato paste or olive oil.
Bake for 30–35 minutes or until cooked through.
Serve with sautéed greens or a side of warm quinoa for extra minerals.
